There are three programs available at the moment that can do exacly that, these are the old PS2 HDD Tool, DMS HDD Format Tool / 48-bit and HDLoader / HDAdvance / 48-bit. For the PS2 to recognize the drive it needs to be formatted with a special Playstation File System (PFS). Or if you have a Western Digital hard drive you need to modify the adapter because the molex and IDE connectors on Network Adapter mismatches, more information here. If you own one of the new PStwo slimline consoles you need to install, or get someone with the soldering skills, to install the Team Xtender HD Connect adapter or the HD Combo case expansion adapter, more details here. After that is taken care of, you just plug the adaptor onto the IDE connector on the hard drive and fasten the adaptor to the back of the PS2. The important bit of information here is that the hard drive jumper settings needs to be set to MASTER mode. It's quite easy to install the hard drive, first you of course need the network adaptor and one of the compatible hard drives you find on this site.
